Ingredients
- 2 tablespoons butter
- 1 1/2 cups onion, chopped
- 1 cup celery, finely chopped
- 1 cup green pepper, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon fresh parsley, snipped into pieces
- 1 cup water
- 1 teaspoon salt
- 1/8 teaspoon red pepper
- 2 bay leaves, crushed
- 1 pound cooked lobster meat, sautéed in a little butter
- 3 cups cooked rice
Directions:
- Melt butter in a saucepan and sauté onion, celery, green pepper, and garlic until tender.
- Remove from heat and stir in tomato sauce, water, and seasonings. Simmer 10 minutes. Stir in lobster meat and heat over medium heat 10 to 20 minutes. Serve over rice.
