Lobster Creole

Ingredients

  • 2 tablespoons butter
  • 1 1/2 cups onion, chopped
  • 1 cup celery, finely chopped
  • 1 cup green pepper, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon fresh parsley, snipped into pieces
  • 1 cup water
  • 1 teaspoon salt
  • 1/8 teaspoon red pepper
  • 2 bay leaves, crushed
  • 1 pound cooked lobster meat, sautéed in a little butter
  • 3 cups cooked rice

Directions:

  1. Melt butter in a saucepan and sauté onion, celery, green pepper, and garlic until tender.
  2. Remove from heat and stir in tomato sauce, water, and seasonings. Simmer 10 minutes. Stir in lobster meat and heat over medium heat 10 to 20 minutes. Serve over rice.
